When clients of mine are sluggish during their morning workout I ask if they’ve eaten before coming in. If they sheepishly say no it’s usually followed by either “…because I’m not hungry in the morning.” or “… I didn’t have time.”
I can’t do much about the first except point out the benefits of eating breakfast (revs up your metabolism, gives you fuel and maintains your energy for the day, helps with weight loss, is yummy) but I can help with the second. A friend of mine gave me the following recipe that I often make on Sunday evening and just slice, reheat and eat for the rest of the week.
- 6 eggs
- 16 oz Cottage Cheese (use lowfat to make it a healthier dish)
- 1- 2 cups of Extras – whatever else you want to add: ham, bacon, cheese, veggies, etc…
Preheat oven to 350. Beat the eggs and mix in the cottage cheese. Add the extras. Pour into a greased quiche-type pan (I use a 9.5″ round glass pan sprayed with Pam). Bake for 50 minutes. Serve right away or put in the fridge and microwave slices as you need them.
I’ve eaten the slices on their own with english muffins but I’ve also used the slices to make breakfast quesadillas (instead of having to scramble up eggs to order in the morning). My friend who gave me the recipe adds the slices to salads. If you try this recipe, I’d love to hear what extras you add and if you find new ways to eat it.
